Colombia: Buenavista, La Divisa, Diofanor Ruiz, Washed - Filter Roast
This coffee was cultivated by Diofanor Ruiz at La Divisa farm. The beans were carefully harvested, with only the ripest cherries selected. After floating and hand-sorting to remove imperfections, the cherries underwent a 30-hour underwater fermentation process. Following this, the beans were pulped, gently washed, and dried in temperature-controlled conditions to achieve the perfect moisture level.
This microlot consists entirely of the Papayo varietal, a rare mutation originating in Acevedo, Huila. The cherries, which turn orange and resemble papayas when ripe, produce a complex cup profile.
Diofanor Ruiz grew up in a family deeply rooted in coffee farming, spending much of his early life working on the family farm. Choosing to follow in his family's footsteps, he earned his coffee farming certification in 2003. Two years later, in 2005, he purchased his own farm, La Divisa. This 14-hectare farm is situated at an elevation of 1950 meters above sea level in Buenavista, Quindio.
